The Doctors or The Dunces?

January 23, 2010 Leave a comment

I saw the most appalling thing on day time TV a few days ago.  The so called “Doctors” on the tv show “The Doctors” were discussing popular diets.  They actually were stating that the Taco Bell Drive Thru Diet is a good idea, because it cuts calories in half! Sure, at a quick glance of the nutrition facts, it seems like it could be a healthy option.  But let’s really think about what you are eating.  What are you eating you ask?  I don’t know.  Have you ever seen the meat at Taco Bell.. is it real meat?  What is it?  I am sure the taco sauce is filled with horrible chemicals, such as MSG that just poisons your body.  God forbid people dieted with real nutrition.  Let’s just shove our faces with fake chemical ridden slop and get cancer.  That seems like a fun way to commit suicide.

And it sickens me that “The Doctors” were pushing this diet.  How much money were they paid to suggest this crap to their audience of millions with a straight face.  Don’t even get me started on the fact that they had the subway guy “Jared” there to talk about the Subway diet.  Sure he may look like he is a healthy weight on the outside but on the inside his organs are being eaten away by all of that chemical garbage.  Let’s make a bet on what year he will be diagnosed with cancer, 2015, 2020?  Then he can get some chemo and fill his body with more toxic waste.

Congratulations Dunces.. you just pushed toxic food on your audience and made a quick dime.

i was going to write a blog on this but..

MMM REAL FOOD

September 21, 2009 Leave a comment

Are you super hungry?  Maybe you haven’t eaten all day, or you are stressed and want to pig out.  Considering making a quick, healthy meal like this before splurging on that burger or pizza.  It is vegetarian and CAN be vegan, if you leave out the eggs.  It is an alkalizing meal that is mostly vegetables.

Alright, so what’s on the menu?

Breaded zucchini, avocado spinach salad, whole wheat pasta

Breaded zucchini

ZUKES

  • Mix one egg in a bowl with salt, pepper, any other spices you may enjoy
  • Cut your zukes in thin, round slices
  • Pour them in a large zip lock bag with whole wheat flour.  Shake until coated.
  • Pour in the egg mixture and shake until coated with egg
  • Pour in whole wheat bread crumbs and shake until coated — the amount of egg, flour, and bread crumbs will depend on how many zukes you have.  Shaking everything in the bag helps with clean up!
  • Drizzle olive oil onto a baking sheet and spread it around so it is completely greased
  • Spread the zukes on the baking sheet evenly
  • Add additonal salt, pepper, and spices at this point and drizzle a small amount of olive oil on top
  • Bake at 350 degrees until crispy, approximately 25 minutes.  You can flip them half way if you want, but they turn out fine without flipping them

Spinach Avocado Salad

avocado salad

In a large bowl toss

  • 1 bag baby spinach
  • 1 avocado chopped
  • parmesan cheese
  • 2 tablespoons olive oil
  • 3 tablespoons vinegar (balsamic, apple, red wine; whichever you prefer)
  • salt and pepper to taste
  • 1 granny smith apple chopped

Whole Wheat Pasta Dish

recipe4

  • Boil your whole wheat pasta, set aside
  • In a large saucepan sautee garlic in olive oil, be careful not to burn it!
  • Add 2 large tomatoes, stir and lower heat
  • Add as much broccoli as you want
  • Add the pasta into the mixture and stir
  • Salt, pepper, red pepper flakes to taste!

Enjoy with water, or if you must an all natural 365 soda from whole foods.

Everything in moderation? NO THANKS!

September 11, 2009 2 comments

JunkFoodPic-main_Full

You are so sneaky and cruel. don’t think that i won’t catch you before you get to me. you fool everyone, but not me. you are on my list and i will expose you.. food additives.

“Everything in moderation” is a phrase that is thrown around quite frequently.  I say, no thanks!   Additives are  poison, and I certainly do not want any in moderation.

Additives are used in food to help preserve, add bulk, brighten colors, etc.  Fortunately, you can learn to cook fresh whole foods so you don’t have to rely on these deadly ingredients.

If these ingredients are in any foods you eat, DISCARD THEM and never bring them into your home again… or you will be committing suicide by food, for sure.

Monosodium Gluconate AKA MSG

  • a flavor enhancer
  • not just in Chinese Food
  • hides out in other ingredients, for example: hydolyzed protein, monopotassium glutamate, gelatin, textured protein, plus many more
  • can cause MSG complex (nausea, numbness, chest pain, headache, rapid heartbeat, difficulty breathing)
  • is an excitotoxins causing cardiac arrhythmias
  • is EXTREMELY hard to avoid, but can be avoided by limiting processed foods and reading the label very, very carefully

Acesulfame-K

  • is a sweetener 200x sweeter than sugar
  • often found in gum, baked goods, gelatin, and soft drinks
  • CARCINOGEN

Blue 1 & 2, Red 3, and Yellow 6

  • Food colors
  • CARCINOGENS

Sodium Nitrates

  • often found in processed meats, smoked fish, hot dogs, bacon, etc
  • break down to nitrosamines in the body which are CARCINOGENS

Potassium Bromate

  • increases volume in breads
  • banned in every country but Japan and the USA (hmm interesting)
  • If used in CA, needs a cancer causing label
  • obviously, a CARCINOGEN
  • take note of how often you will see this ingredient
  • sometimes you will see it as BROMATED FLOUR

Propyl Gallate, BHA and BHT

  • used to prevent fats and oils from spoiling
  • often found in cereal, vegetable oil, and potato chips
  • CARCINOGEN

Try this suicide by food challenge:

Go in your kitchen cabinets and pull out 10 random processed foods.  Check the labels and see how many products contain at least ONE of these ingredients.  What you may find will shock you.  Now imagine that you eat a few of these cancer causing ingredients a day.  That accumulates in your body.  Your poor body can’t even excrete these toxins at the rate that you are ingesting them.  Seems pretty obvious why cancer is so rampant in the USA.

Personally, when I grocery shop in a regular supermarket, I stay away from the center of the store.  I am sure you have heard about this for weight control reasons, but now you can apply it to smart shopping regarding additives.  If its on the shelf, it is most likely processed, and most likely has dangerous ingredients.  There have been so many protests to eliminate several of these ingredients throughout the year.  In fact, in the 1970′s the USDA tried to ban sodium nitrates, but was preempted by the meat processing industry who relied on this ingredient to make meat look more appealing.  Pathetic.

I know there are SO many more additives that need to be added to this list, so feel free to comment and write a few lines about them.  EXPOSE THE TRUTH.

WHAT A JOKE!

September 10, 2009 2 comments

HAHAHA, please.. go to http://www.7up.com and have a good laugh with me.  They say “7 up, now 100% natural flavors”.  Blatant LIE.  Reading the ingredients on the 7 up can, I see my favorite enemy.  High fructose corn syrup.  Last I checked, the FDA stated that HFCS is NOT considered natural and should NOT be labeled as such.

So why is 7 up lying?  Or are they trying to pull the wool over the eyes of poor souls who see the words “natural” and “antioxidants” and think.. boy that must be healthy.  Maybe 7 up doesn’t consider HFCS a “flavor”.  Needless to say, it’s in there, it’s not natural, and this is false advertising.

Okay, I have one more bone to pick with them.  Their 7up antioxidant.  It’s the same shitty ingredients as the regular 7up with vitamin E added, so they can say there are antioxidants in the drink.  Check the nutrition facts.. 10% vitamin E.  Give me a break.

I’m really sick of false advertising of “healthy” products.  The American people are so confused as it is.  Low fat, low calorie, low carb, no sugar, no trans fat…. All of these words are the best marketing schemes I have ever seen in my life.

Not all bread is made equal

The whole wheat vs white bread debate.  Is it really worth all the hype?

YES

whole wheat

Whole wheat bread is made from all of the components of the wheat berry, where white bread is made from only one component.  This causes the white bread to miss out on a TON (okay, about 30) nutrients.  Whole wheat bread also has a lot more fiber than white bread.  Fiber increases bulk and decreases the amount of time stool is in the digestive tract.  Fiber is shown to decrease the incidence of colon cancer.

What does switching to whole wheat bread mean for your children?  It means that your child is eating a REAL whole food.  White bread is processed and refined which causes spikes and drops in blood sugar.  This will decrease your child’s ability to concentrate in school and effect their energy levels.

Tips on picking out a whole wheat bread….Always make sure the first ingredient is “whole wheat flour” instead of “enriched white flour” or “wheat flour”.  These are tricks!  Of course avoid high fructose and high maltose corn syrup.

So you’ve switched to whole wheat bread?  Try whole wheat pasta, whole wheat pizza dough, etc.  Look for my whole wheat pizza dough recipe in a future blog :-)

Feeding your children processed foods… setting them up for food suicide

August 30, 2009 Leave a comment

I am forced to quote the FDA again….  “Food manufacturers are required to list all ingredients in the food on the label. On a product label, the ingredients are listed in order of predominance, with the ingredients used in the greatest amount first, followed in descending order by those in smaller amounts.”

So with a little common sense we can figure out that Fruit Loops is a horrible food (chemical, whatever) to feed your child for breakfast.  The very FIRST ingredient listed on the box is SUGAR.  Sugar does not provide your child with the fuel he needs to make it through until the lunch period (and if lunch comes from the school, you can almost bet it will be more of the same crap).  Besides sugar, there are several processed ingredients, as well as a TON of food dyes.  New studies show that artifical coloring agents aggravate ADHD.   Artifical color toxins + excessive sugar = serious problems in school for children alike, but especially those with ADHD.

Children need a well balanced breakfast to improve congnitive function, concentration, and memory.  The Omega 3′s will improve cognitive function.  Choline, antioxidants and whole grain all improve memory.    Making sure your child gets enough iron and H2O will significantly help mental alertness.

Well omega 3′s are super easy to add in the form of flaxseed.  I prefer ground flaxseed meal because it is almost tasteless.  Sprinkle some in yogurt, or on top of a piece of whole wheat toast.  Eggs are a great source of choline, and fruits and veggies are packed with antioxidants.  Lean meats, whole grains, and spinach have plenty of iron.

So on your busy schedule, how will you ever fix your child a meal to include all of these vital nutrients?

Breakfast Ideas

Spinach, ham and cheese omlet –> this is a great way to get spinach into your kids.

  • Mix 1 egg, small pieces of spinach, and 1/2 slice of american cheese
  • Pour into small pan coated with a tsp of olive oil
  • Put a few pieces of NITRITE FREE ham on the top of the eggs
  • Flip into an omlet
  • Serve with a piece of whole wheat toast and fresh fruit

Fruit smoothie

  • One banana
  • 1/4 cup raspberries and blueberries
  • 1 tablespoon all natural/organic peanut butter
  • 1 tsp honey
  • 3 tablespoons ground flaxseed
  • 1/2 cup milk
  • Blend with some ice until its a smoothie!  This is a great lunch on a weekend or during the summer as well!

Dinner Ideas

Spaghetti and Meatballs

  • 1 lb 93 % lean organic, grass fed beef (available at http://wholefoods.com)
  • Mix 3 cloves finely chopped garlic, 1 egg, 1/4 cup whole wheat bread crumbs, salt and pepper to taste, and fresh basil with the ground meet
  • Make them into meatballs, any size you prefer.
  • Coat a muffin pan with a small amount of olive oil
  • Put each meatball in an individual muffin separation
  • Bake at 350 degrees until cooked through (25-40 min depending on the size)
  • Drop meatballs into marinara  (Use my marinara recipe from the previous post, only double the recipe)
  • Cook at a simmer for at least 20 min.  If you have more time let them simmer for a couple hours for the best taste
  • Serve over whole wheat pasta with a salad  (look for my avocado salad recipe soon!)

Regardless of what you feed your child for breakfast, just remember one simple rule.  If sugar is the first ingredient on the box do no buy it!!! No matter how much your kid whines, begs, and cries.  When they are adults, they will understand.  My mother never let me eat that shit and I used to be SO jealous of all the other kids.  But now I couldn’t thank her enough for not putting that shit into my growing body!

RECIPE

So.. one thing that bothers me more than anything is when I see people use jar sauce.  Yes, disgusting Ragu or some shit.  I won’t go into my rant on processed foods again, but lets just say there are SO many added ingredients that are not necessary, especially sugar and sodium.  Some are to preserve the tomato sauce, but the beautiful thing is you can make this recipe and freeze it, defrosting as you want.

This recipe literally takes 2 minutes longer than pouring jar sauce in a pot and warming it up.

Pour 3 tablespoons extra virgin olive oil into a saucepan.  Add 3 cloves finely chopped garlic, medium heat.  Sautee until garlic is clear.

Pour in 1 can of organic crushed tomatoes (if you like chunky sauce, leave the tomatoes alone, if you like smooth, hit them with a handheld blender for a few seconds before adding)

Stir and lower heat to a simmer.  Add salt, pepper, fresh basil to taste.  You may also add any other spices you want.  For example to make a spicy marinara, add red pepper flakes.

Let simmer at least 10 min.  If you have time, simmer longer, but this is a quick sauce so 10 min will do it!

Pour over whole wheat pasta :-) pasta

This recipe is also great with FRESH tomatoes.  Just let simmer a little longer because they can be watery.

Nitrites….. a long, painful suicide

August 28, 2009 Leave a comment

Processed meats.. a staple in american culture.  Hot dogs, sausage, subs (or hoagies, depending on where you’re from), bacon, etc, etc, etc.  You would think the high fat content is the most dangerous deal with these meats.  But that is not the case at all.  Nitrites are far more dangerous.bacon

Processed meats are…well,  processed with nitrites.  Nitrites help to preserve the meat, and also give them that beautiful color that makes you want to stuff your face with them.  Unfortunately, after you do that the acidity from your stomach converts these nitrites to nitrosamines.  Nitrosamines are proven carcinogens in animals, which gives us humans reason to believe that they are carcinogenic to us.

Besides their carcinogenic effect, nitrites also can react with the hemoglobin (transports O2) in your blood.  Methemoglobin is formed.  Now not enough O2 is being transported throughout your body.

Normal individuals have low levels (0.5 to 2%) of methemoglobin in their blood. When this level increases to 10%, the skin and lips can take on a bluish tinge (cyanosis), and levels above 25% can cause weakness and a rapid pulse. At levels above 50 to 60%, a person can lose consciousness, go into a coma, and die. Infants are much more sensitive than adults to nitrates/nitrites, and essentially all deaths from nitrate/nitrite poisoning have been in infants. Long-term exposure tolower levels of nitrates and nitrites can cause diuresis (an increase in theamount of urine, and starchy deposits and hemorrhaging of the spleen).

So what in the world can we do to protect ourselves from this toxic substance.  DON’T EAT IT.  There are so many products that are made nitrite free.  Just look for “nitrite free” on the label or read the ingredients.  Stores like whole foods offer nitrite free products for cheaper than you would imagine.  For a few cents more you can get chemical free meat! Imagine that.  Meat itself can be considered a carcinogen in the body (which we will get to in a later post), so why add gas to the fire?

Alright, you can’t resist and you want to contribute to a slow foodicide?  Eat foods high in Vit C and E before eating your shitty meat, I’m talking like 10 oranges.  These vitamins are shown to inhibit the conversion of nitrite to nitrosamines.  At least using this method is like russian roullette.

http://www.wholefoods.com  —> their deli meats are nitrite free, plus they have several grocery products that are nitrite free (pepperoni, frozen products, etc)

http://heritagefarm.com —> nitrite free sausage

http://colemannatural.com —> nitrite free hot dogs!

That should do you good for now!

As promised… a quick lesson on CHOLESTEROL

August 27, 2009 1 comment

LDL, HDL, triglycerides.. your major components

LDL and HDL are your lipoproteins.  Lipoproteins carry cholesterol through the body.  HDL or HIGH density lipoproteins carry your cholesterol to the liver where it can be reused or excreted.  This is why it is known as the “good cholesterol”.  Your LDL or LOW density lipoproteins transports cholesterol from the liver to the rest of your body.  Increased levels can cause athersclerosis aka thickening of the artery walls and as I’m sure you know, puts you at a higher risk for heart disease.

Last but not least, the infamous tricglycerides.  When you eat, your body uses the calories from the food.  Basically, whatever is left over turns into triglycerides and stored in your fat cells for later use.  SOOOO it is pretty self explanatory why you would not want excessive triglycerides.

Here are some inciteful articles about lowering your cholestrol and cholestrol medications.
